Bakery brings sweet, diverse tastes

“My cheesecake,” he said without hesitation. “The key is using quality cream cheese, and I use five ingredients.”

Make that secret ingredients.

Combining years of restaurant experience with suggestions from his valued customers, Dempsey bakes a wide variety of dessert delights from his spacious shop located inside the Sun Break Cafe.

Baked in the Rain specializes in all things sweet – from bear claws to Danish pastries, cinnamon rolls to cookies, doughnuts to bagels.

The bakery’s ever-changing menu offers a variety of freshly-made breads, either pumpkin or banana, light or dark rye, white or wheat.

“Not only do we offer traditional American, I will do some Italian, some French and Greek pastries,” Dempsey said. “I will do all nationalities.”

There also is a lineup of cakes, headlined by the daily cheesecake of choice. Online customers can vote for a favorite cheesecake flavor of the week.

The bakery recently has expanded its decorating desserts to birthday and anniversary cakes and cupcakes with a catering service. Marissa Nuez is the bakery’s resident cake and cupcake decorator.

Trained in the culinary arts, Dempsey has been in the business ever since he was in high school working at the Space Needle restaurant. He also has worked at a French restaurant in Des Moines, a Japanese restaurant in Burien and managed a Jack in the Box for six years.

When the Sun Break Cafe needed someone to revive its bakery, Dempsey came calling. He has been in business daily since December.

“It’s a challenge but yes, I am enjoying it,” said Dempsey, who was raised in the Seattle area and today makes his home in Covington.
